Craft: Fox and Friends card

I recently accquired the Fox and Friends stamp set from Stampin' Up. I have been meaning to get it for ages and so I couldn't wait to have a play! This is a card I created based on this wonderful card from Jacque at  http://stampinwithjacque.com/fox-friends-2. The stamp colours I used are Not Quite Navy, Cajun Craze, More Mustard and Chocolate Chip. I stamped the Happy Birthday from the Create a Cupcake set and used my Creative Memories square punch to get the animals and backgrounds square. The background paper is from some Creative Memories scraps I had. I am really pleased with the end result!

My Valentines Day Baking

My son and I were stuck inside today as it was raining, so I decided to make us some Valentines Day treats! I got the inspiration from this website and it was a great activity that I thought was yummy too!

Strawberry Rice Bubble Cupcakes.

You will need:

1 1/2 cups Rice Bubbles
1/2 packet of pink strawberry flavoured marshmellows
2 tbsp butter

Melt the marshmellows and butter together in a large saucepan, then remove from heat and stir in the Rice Bubbles.


Place teaspoons of the mixture in a silicone or well soiled mini muffin tin and leave to set.


Once set, place in cupcake liners and serve.


These only last for a day or so in an airtight container, but feel free to double or triple the recipe to suit your needs!

Coconut, Apricot and White Chocolate Slice

Mmmm, this is one of my favourite no-bake slices to make and so I thought I would share the recipe with you. It is so simple but tastes so yummy! I have adapted this recipe from Annabel Langbein's recipe book The Best Of Annabel Langbein. This is also a post in the Kitchen Fun and Crafty Friday Link Party!

Ingredients:

100g butter
3/4 cup sweetened condensed milk
250g pack of plain biscuits such as Superwine, crushed to fine crumbs
150g dried apricots, finely chopped
1 cup desiccated coconut
2 tbsp lemon juice
3/4 cup white chocolate melts

In a large saucepan, melt the butter with the condensed milk. Make sure not to boil the mixture. When the butter has melted, remove from heat and stir in the crushed biscuits, apricots, coconut and lemon juice. Mix well and then press into a 30cm x 24cm baking dish. Refrigerate until set.


Once the slice has set, melt the chocolate melts in a small microwave bowl and then pour over the slice, spreading out evenly.

Let the chocolate set and then cut into small pieces. I get at least 24 slices out of this- you only need a little piece!

Project Life Update

I have been continuing my Photo A Day mission, and am finding it really fun! Here are the last four weeks of my life.




As you can see, these are all double page spreads with one page being a week in my life. I look forward to sharing next week's photos with you soon!
