Virtual Book Club For Kids (Laura Numeroff)

This month, the feature author of the Virtual Book Club for Kids is Laura Numeroff.

I hadn't read any of her books before, but we really enjoyed reading If You Give a Dog a Donut.

Lucas and Adam both love dogs, and so for lunch we made Puppy Pikelets with peanut butter, pretzels, dried apricots, craisins and some fruit shreds for the puppy food.

After lunch, Lucas really wanted to make some donuts after reading about them in the book. We decided to make apple flavoured ones since the Dog wants apple juice to go with his donuts, and also make them in the cake pop maker as this way they do not need deep frying and are the perfect size for little hands.

Apple Donut Balls:
adapted from Sweet C's Designs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup sugar, + 1/4 cup for coating
  • 1 tablespoon vanilla extract
  • 1/4 cup grated apple ( about half the apple- your little helper might enjoy munching on the other half!)
  • 1/2 cup milk
  • 1/4 cup cinnamon, for coating
Instructions:
  1. Fill a bowl with cinnamon and sugar to coat the donuts with and set aside.
  2. Cream together sugar and butter in a stand mixer
  3. Add in eggs one at a time, mixing thoroughly.
  4. Add in vanilla, milk, grated apple and extract
  5. Slowly fold in flour and baking soda- be careful not to overmix.
  6. Spoon in batter to fill bottom of a well heated and greased cake pop machine.
  7. Cook according to manufacturers directions (about 5 minutes).
  8. While piping hot out of the machine, dump into sugar and cinnamon bag/bowl and toss to evenly coat.
  9. Eat immediately and enjoy!

These were yummy and tasted just like donuts! The grated apple provided a nice burst of flavour and with no hot oil, these were easy for Lucas to help with.

  1. Great idea doing them in that machine so that you don't use oil. Heaps healthier!!
